It's summer time a time to rest and recharge, as teachers we need this precious time. While ideas are swirling in our heads and excitement is on the horizon for a new school year filled with new possibilities. I urge you to take this time, relish in it breathe it in...it is so fleeting. Enjoy your family, host a party with friends, say yes to spontaneous plans. Eat it up, because the new school year is knocking on the door.

Blackberry Caprese Skewers

English Cucumbers
Mozzarella Pearls
Fresh Basil
Balsamic glaze
Sea Salt

These are my favorite summer time appetizer. They are so easy to put together and everyone loves this fresh flip on a typical caprese appetizer. To make slice your cucumbers into 1/4 inch slices, then cut in half. Slide a blackberry, fresh piece of basil, mozzarella pearl and then the cucumber onto a tooth pick. Drizzle with balsamic glaze and a pinch of sea salt. These tasty treats will soon become a party favorite.
